2 Cups Cooked Montana Beets (diced)
3/4 C Buttermilk
Juice of a Large Lemon
2t White Vinegar
1 1/2 t Vanilla
Puree in food processor or blender
Dry Ingredients: (all available in our bulk section)
1 3/4 C All Purpose or Bob’s 1 to 1 GF Flour
3T Cacao Powder
1 1/8t Baking Powder
1/2t Baking Soda
3/4 C Butter
1 3/4 C Sugar
3 Local Eggs
Directions: - Preheat oven to 350. Grease and lightly flour two 9 inch bake pans. In your bowl with the creamed ingredients, in 1/3 intervals add your wet and dry ingredients until it just comes together. Distribute evenly between the two pans and bake for approx. 20 minutes.
Frosting: use two parts cream cheese to one part butter, a splash of lemon juice and vanilla, grade b maple syrup to taste and house made no sugar raspberry chia jam.
